Dans le m\u00eame temps, cuire les \u00e9pinards de bettes 15 minutes dans l\u2019eau bouillante. Les essorer au maximum apr\u00e8s cuisson.<br \/>\nPr\u00e9parer une b\u00e9chamel avec le beurre, le lait, la farine, la muscade.<br \/>\nFaire revenir les cardes avec les \u00e9chalotes une dizaine de minutes et ajouter le persil en fin de cuisson. Faire revenir les \u00e9pinards avec l\u2019ail une dizaine de minutes et ajouter quelques gouttes de sauce soja, du sel et du poivre, en fin de cuisson.<br \/>\nDans un plat \u00e0 gratin beurr\u00e9, d\u00e9poser une couche de cardes, saler et poivrer. Recouvrir de lamelles de cont\u00e9 ; puis ajouter la couche d\u2019\u00e9pinards.
